Here we introduce you to our new Cibo e Vino tasting room. Conceived as a place of welcoming, gathering, sharing and education, through wine, food and our own stories, you will get to know Ampeleia and truly become part of it.
At the end of the winery visits and tours, we will welcome you here to taste the wines together, in a guided tasting experience.
Wine calls for food, which is why our offer includes a menu specifically created for us. In fact, you will find dishes that reflect the place and its traditions, prepared by true "Maremma hands", those of our cooks Ilaria and Tiziana.
The protagonist is Ampeleia pasta, made with 100% Cappelli variety wheat that we grow in our fields at 250 m asl and partly at our friends at Tenuta San Carlo, an organic farm in Grosseto. The well-known artisanal pasta producer Fabbri processes it for us and returns it to us ready to become a delicious and rich dish with unique nutritional (and taste) properties.
Oil used in the preparations comes from our olive trees, honey from our bees, flour from our grains, even the passion in preparing the dishes is all ours, and we are happy to share it with you.
Everything that does not come directly from our fields comes from local, highly selected producers, with whom we have been networking for years. We share ideals and production philosophy with them, in a relationship of trust and collaboration. We promote their work, in which we believe, and they promote ours, and in doing so we are spokespeople for this area.
And then there is the bread... Our winemaker Marco Tait is also an excellent baker, and he often delights us all with breads, pizzas and focaccias with a long and natural rising process.
From now on he will definitely bake for all Ampeleia guests, and from spending time with them on this topic as well.
